1. It depends on what rules you play by. If you play side-out volleyball (Pre-2000 era), you must score 15 points. If you play by rally scoring, you must score 25 points. A traditional beach volleyball game is played to 21.
2. First, you always need to keep your hands above your forehead. If you don't, you will be called for a lift. Also, square up towards the person you are setting the ball to. It you don't, it is very hard to keep the set legal, all though it is possible.
